Each evening weaves poetry, performance, and sound into the rhythm of the dining experience — a collaboration between Iris Onica, whose composition and voice capture the pulse of Filipino emotion, and James Harris, whose music and cocktails translate those emotions into texture, taste, and tempo.

Pat Villaceran is the founder of The Greats’, a global wellness and sustainability brand rooted in design thinking, mind–body–spirit alignment, and regenerative systems.
As the award-winning President of Innovations Firm, The MooVe, and a global business architect recognized for designing high-growth, innovation-driven ventures that achieve macro-level profitability through micro-level human alignment, she bridges enterprise performance with human purpose.
Her work integrates food science, sustainable agriculture, and circular-economy design into elegant consumer experiences that restore both people and planet. Drawing from her Filipino heritage, Pat merges modern design with ancestral intelligence through Hinabi Privé, transforming culture into contemporary wellness and storytelling.
Calm in tone yet catalytic in impact, Pat embodies a new generation of leadership—one that measures success not by volume, but by alignment.
James Harris is the co-creator of Hinabi Privé, a sensory dining and mixology experience that blends Filipino heritage with modern design.
A musician and mixologist, he approaches flavor the way he approaches music — with rhythm, emotion, and precision.
Before co-founding Hinabi Privé alongside Pat, James built a distinguished career in the UK, owning and operating cocktail bars in Wokingham and the Director of Operations at Tin & Glass, a consultancy known for curating high-profile bar programs, including for The Wimbledon Championships.
His signature cocktails are defined by empathy and bold creativity — each designed as a living story, unique to its moment.
